Dr. Nuha Mustafa
Dr. Nuha Mustafa obtained her Ph.D. in Germany at the Federal Research Institute for
Nutrition in Karlsruhe, Germany, and the University of Khartoum, she joined the United
Arab Emirates University as an Instructor in the Fall of 2014, Dr. Nuha is currently
the Assistant Dean Of Student Affairs in the College of Agriculture & Veterinary Medicine.
She is Responsible for Student Affairs at the College with a focus on coordinating educational and student-related activities. Working closely with students, administrators, and campus resources to promote student success and serve as a student advocate by representing their needs. Additionally, Dr. Nuha works on supporting Faculty Academic Advisors in their counseling efforts and coordinates support services provided by the University with the activities of the College.
She taught a range of theoretical and practical courses in Food Safety, Food Preparation, and Food Product development in addition to general education courses, as well as assisted with the development and implementation of new courses and programs and Participated in accreditation and assessment efforts for the department of Food Science.
Some of the courses she taught are Food microbiology, Sensory Evaluation, Contemporary Food Science and Nutrition, Fundamentals of Food Preparations, Principles of Food Science, Food Safety Hazard Analysis and Critical Control Points, and Food Product Development.
Dr. Nuha also mentored students in research projects and supported their participation in scholarly activities through three Sure Plus summer research grants, and two Sustainable development Goals Research programs related to Food Waste.
Part of her duties is participating in an interdisciplinary research project at the College of Agriculture and Veterinary Medicine in collaboration with FAO, the Ministry of Climate Change and Environment, and James Cook University, Australia to identify preferences for fish and attributes of fish products important to consumers in the United Arab Emirates (UAE). Such preferences are expected to guide the development of consumer-appropriate aquaculture to meet the aspiration of the UAE to increase aquaculture production
Dr. Nuha is also leading a University-wide initiative towards achieving Zero Food Waste at the UAEU campus, starting with a Food waste audit across all food serving units and organizing raising awareness campaign about the negative impacts of Food Waste with my students targeting Al Ain community.
Dr. Nuha’s research interests include: Food Waste Management, Food Safety and Consumer Science, and Molecular Characterization of Foodborne pathogens.
